Eunice Meredith
Kirkeby
July 25, 1921 – August 4, 2002
Eunice Meredith (Wold) Kirkeby was born on July 25, 1921, at Boyd, Minnesota, to parents Christian and Helma (Anderson) Wold. She was baptized and confirmed at the Boyd Lutheran Church. She graduated from Boyd High School in 1940. Eunice was united in marriage to Lloyd Kirkeby on July 12, 1940, at Boyd, Minnesota. They farmed for many years. In 1955, the family moved to California. The Kirkeby family returned to Clarkfield after two years in California. Eunice then worked at Audrey's Cafe in Clarkfield, the Clarkfield Bakery, the Clarkfield IGA Store, the Clarkfield Nursing Home and for 20 years was the head cook at the Clarkfield Public Schools. Eunice retired in 1983. She and Lloyd maintained their home in Clarkfield for several years before moving to Starbuck, Minnesota. In 1997 they moved to an assisted living home in Marshall, Minnesota. In 2001, Eunice moved to an apartment in Glenwood, Minnesota, and in May of this year, she moved to the home of her daughter Nona and husband Don Stokke on Lake Minnewaska, Starbuck, Minnesota. She loved the sunsets, watching the birds, riding on the pontoon, and the peacefulness of the lake. Eunice will forever be remembered for her outstanding ability to cook, bake, and her specialties of lefse, flat bread and chocolate chip cookies. She also loved gardening, canning, sewing, quilting, embroidery, playing cards, and was an avid Viking football fan. Her most special gift was the love and caring concern for her family. Her pleasant and outgoing personality allowed her to meet numerous new people and make friends wherever she went. Eunice passed away at the home of her daughter, Nona, on Sunday morning, August 4, 2002, at the age of 81 years and 10 days. She will be greatly missed by her sons: Delas (and Cathy) of Alexandria, Minnesota, and Michael of Hawley, Minnesota; and daughters: Nona (and Don) Stokke of Marshall, Minnesota, and Diane (and Larry) Nutter of North Oaks, Minnesota. She is also survived by nine grandchildren; 13 great grandchildren; brothers: Clarence Wold of Sauk Rapids, Minnesota, Norman (and Elaine) Wold of Alexandria, Minnesota; sisters: Ruth Bolm of Yakima, Washington, and Ruby Wood of McMinnville, Tennessee; sisters-in-law: Dorothy (Kirkeby) Peterson of Cupertina, California, and Charlotte (Kirkeby) Vik of San Antonio, Texas; many nieces and nephews; and her special friends at the Glenwood Home Health and Hospice. She was preceded in death by her parents; husband, Lloyd; three brothers; one sister; and four grandchildren.
